Q: can it be kept in the freezer, if so, for how long?

Many people keep it in the freezer. I typically don't because it can draw moisture especially if not packaged correctly. If you are looking for long long term storage personally I get the really good mylar bags they're pretty affordable. You can seal them with a hair straightener. If you do it right you can usually get 2 seals using the hair straightener what I mean is you still want to seal it good that's most important. But I have been able to reuse and reseal with a straightener twice about 40-60% of the time. Many mylar bags come with oxygen absorbers to further help with keeping it fresh. But if they don't just make sure to get the right size absorbers or put however many you need for the size of the bag. Flour is very shelf stable and you can use the freezer space for something else that you can not store on the shelf. I have found flour I forgot about in the back of my pantry for that had an expiration date or sell by date from 5 years prior. I made a batch of cookies to test it and believe it or not it was absolutely fine in the bag it came in. But I understand not wanting to chance it. Storage conditions matter when you are talking about long long term storage. If you are just wanting to know about perishability unbleached organic flour can stay good a very long time. Especially if you keep it in air tight containers or canisters. I have found some air tight canisters weren't as air tight as they should be. Air tight isn't 100% air free but still will store your flour for a very long time.
