A.C. LeggSweet Italian Sausage Seasoning

I have repeatedly ordered several of these over the years, as I use them to mix with venison to make sweet Italian sausage which comes out great every time. I usually only use the mix with a total of 15 pounds of meat, I like the flavor to be a little stronger. I use 12 pounds of venison and 3 pounds of pork and pork fat with one package. The finished product comes out great. I also add in some fennel seeds, about 8 tbs, to the mix for extra sweet Italian flavor. Comes out perfect every time. I have repeat ordered this mix for the last several years, can't seem to find it in any stores, so glad Amazon sells it.

Have used many AC Legg products- all are great base for sausage . Add wine other ingredients to change recipes and develop your favorite recipe or leave as is . Always get positive comments on sausage .

This is my favorite Italian sausage I've made. Great for pizza, lasagna and spaghetti.

Two main takeaways from this batch of sweet italian sausage.1) Flavor of salt dominated. I could taste the rest of the flavors, but salt dominated.2) Measured/weighed out my 8oz before mixing and the package only contained 7oz. Wondering if this is a mistake or standard practice.Had to add ample amounts of paprika, garlic, and brown sugar to cover up the saltiness. But once it finished, wow was it good. Just couldn't hack it otherwise.
