I would surely give it a try. I have used Martha White for many years and many uses, including breading okra, fish etc. I have poured the batter into a hot skillet (I like to use bacon grease in it, too) and made flapjacks which sounds similar to what you are asking about. Enjoy.

Q: Does this cornbread mix make the thick grain, not spungy cornbread. Like I used to get in Alabama.?

Yes, it is drier and more crumbly. It is not cake-like or spongey like it gets when you add eggs. I think this is the best cornbread mix ( I grew up in the South). It is better than most made from scratch.
